Lentil Rice Patties

1/2 cup uncooked brown rice
1/4 cup dried lentils, sorted and rinsed
1 1/2 cups water
2 T finely chopped cashews, almonds, or peanuts (I use almonds)
2 T bread crumbs (I used oats instead)
2 T stir-fry sauce (I use liquid aminos, can find it at any grocery store)
4 medium green onions, or 1/4 c chopped onion
1 egg or egg white

In a saucepan heat rice, lentils and 1 1/2 c water to boiling. Reduce heat to low-cover; simmer for 30 to 40 minutes, stirring occasionally, until lentils are tender and water is absorbed. Cool slightly. Mash with a fork. Stir in remaining ingredients. Shape into 4 patties-about 1/2 inch thick. Cook patties in skillet until each side is golden brown-this takes a little while.
