Chicken Alfredo Lasagna

I forgot to take a picture when I made this for us-I'll post it next time we make it-it is really tasty!
Filling:
3 cups chopped cooked broccoli
8 oz. cream cheese, softened
2 eggs, beaten
Sauce:
9 oz. chopped cooked chicken
28-32 oz. jar four-cheese lasagna (homemade is way better, I'll post my alfredo sauce after this one)
Cheese:
8 oz. shredded Monterey Jack
1/4 c grated parmesan cheese
lasagna noodles-uncooked

Start with 1/3 cup sauce on bottom, then repeat twice: four noodles, filling, sauce, cheese. Bake covered at 375 degrees for 45 minutes; uncover and bake 10 minutes more.

My Fav. Alfredo-I think I doubled it for the whole lasagne recipe
2 cups milk
1 T flour
1/4 tsp salt
Pepper
2 T butter (or olive oil, just to saute')
2 tsp finely chopped garlic
2 oz cream cheese
2/3 c grated parmesan

Stir milk, flour, salt, pepper with wire whick until smooth. In a saucepan, melt butter (I usually use oil). With whick, add in milk mixture. Cook and stir 6 to 8 minutes or until it thickens and boils. Stir in cream cheese until melted. Stir in parmesan cheese until melted. Sprinkle with parsley.

Taco Casserole

1 lb ground beef
1 can of refried beans
1 jar of taco sauce
1 package of dry taco seasoning
1 can of corn
crushed tortilla chips
shredded cheese

Cook ground beef with taco seasoning as directed.
Heat up the beans and corn in the microwave so it doesn't have to cook as long in the oven.

Layer tortilla chips, meat, beans, taco sauce, corn and cheese. Bake until cheese is melted. Bake at 400 degrees for about 10 minutes last night.

Extras that you may want to serve with the casserole:
sour cream
diced tomatoes
onion
extra cheese
chips

King Ranch Chicken (Davis Family Favorite)

Ingredients:
2 cups grated cheddar cheese
1 cup velvida cheese
2 chicken breasts
2 can cream of chicken
2can cream of mushroom
1 can stewed tomatoes
1 can tomato and green chile or Rotel
1 cup chicken broth
1 pack small corn tortillas

Directions:
Boil chicken; cool and cut in small chunks.
Combine velvida and all canned ingredients in a large pot. Heat until velvida is melted and the ingredients are at a sauce consistency.
Soak tortillas in warm chicken broth (this won’t take long. It is best to only soak a few at a time. It is best if you soak just enough for one layer at a time).
Layer your King Ranch Chicken in a large Pyrex dish. Tortillas, sauce, chicken, shredded cheese. Continue to layer until you have met the top of the dish, ending with the shredded cheese on top.
Bake at 350 for 20 minutes. This dish can be made the day before and just wait to cook until you are ready to eat. This meal is great with a bag of tortilla chips and salsa.

Davis Breakfast Casserole

Ingredients:
1lbs sausage
6 eggs
2 cups milk
1 tsp salt
1 tsp dry mustard
6 slices bread (broken)
1 ½ cups shredded cheese
4 oz mushrooms (optional)

Directions:
Brown sausage- drain and cool. Beat eggs and milk together. Add salt and dry mustard. Beat again. Add broken bread; stir until moist. Stir in mushrooms, cheese and sausage. Pour into greased 9x13 pan. Chill overnight.
Bake at 350 for 40-45 minutes.

Chicken Little Recipe

(cook for 6 hours on low)

Ingredients:
6 boneless chicken breasts OR frozen chicken tenders (as much as you want)
Seasonings
6 slices American Cheese or medium sharp cheese or 2% Swiss cheese
1 can regular or 98% Fat Free Cream of Mushroom Soup
....or mix 1 can of Cream of Chicken Soup and mix with 1 c sour cream + 1 cup cream cheese
1 box Stove Top Stuffing according to directions (I add food processed carrots, celery, onion)
SPRINKLE on top poultry seasoning, Italian Dressing and dried chives for taste & color

Layer in crock pot: Frozen chicken, cheese, soup w/1/2 water, stuffing
CLOSE TOP OF CROCK POT...SET ON 'LOW' AND COOK 6 HOURS

NOTE: You can use any variety of this combination and it always turns out delicious. I like to sprinkle seasons on top of chicken before adding anything else.

Good Chicken Casserole (tribute from a friend)


Ingredients:
4 boneless chicken breasts cooked and cut into pieces (2 cups of chicken - I cook mine in oven)
l can chicken a la king
2 -3 little microwaveable things of macaroni and cheese
l cup sharp grated cheese
sprinkle in dehydrated onions (about 2 tablespoons)

Mix all together - crumble a package of crackers on top - dot with butter (l stick)
Bake at 350 degrees 35-45 minutes
