Salsa Lime Chicken


Minus the hour baking time, this is a really easy, quick, and cheap meal. I got this off the back of a bag of chicken we bought at Costco a few years ago.
4 Chicken Breasts
1 Cup Salsa
1/4 C Dijon Mustard
2 T lime juice
Preheat oven to 375. Line a baking dish with foil. Mix the salsa, mustard, and lime juice. Pour on top of the chicken. Bake, covered for 40 minutes. Uncover, bake 10-15 minutes or until done. We just eat this plain, but you could always eat it over rice. Sometimes I use black bean and corn salsa and add in a can of black beans and extra corn.
