Sweet and Sour Chicken (J&GKing)

Josh and I thought we would start out the recipe blog with our dinner for tonight. Some of our friends from Utah gave us the recipe and we love it (thanks Becky Reynolds). We hope y'all will enjoy it as much as we have.

Ingredients:
4 boneless chicken breasts
Corn Starch
2 eggs
Canola oil
Stir Fry Vegetables (optional)

Sauce:
3/4 Cup of Sugar
1/4 Cup of Water
1 Tbsp Soy Sauce
4 Tbsp Ketchup
1/2 Cup of white Vinegar

-Cube the chicken
-Put chicken into the egg (scrambled)
-take chicken out of egg, and smother with corn starch
(after doing this a few times, I found it was easier to put the cubed chicken into a bag of corn starch and shaking it after being in the egg.)
-Take chicken out of the bag and put in frying pan with Canola oil
-you don't have to cook the chicken, just brown the breading
-put into a Pyrex pan

-After chicken is done being fried and put into the pan, pour sauce over the chicken, and put into oven for 50 min. at 350 degrees.
-Sauce will thicken in the oven
-I usually double the sauce because I like a lot of sweet and sour
-When it comes out of the oven stir the sauce with the chicken, so it's all smothered!

Josh and I have found that you can make this dish spicy, which we love, by adding any kind of pepper sauce; such as Louisiana Hot Sauce or Crystal's Hot Sauce.
