1 lb. hot sausage (or whatever kind of sausage you want, we use sweet italian turkey sausage)
1 or 2 large zucchini, chopped
1 or 2 summer squash, chopped
1 tomato, chopped
1/2 large onion, chopped
1 green pepper, chopped (or red, yellow, gold, whatever you have)
1 jalapeno, chopped (we omit this one)
Fry the sausage. When cooked through, add the remaining ingredients and simmer until vegetables are cooked. You can add whatever you want to this dish. It's pretty tasty, we make it a lot.
