Veggie Frittata


12 eggs, or egg whites
2 cups fresh spinach,torn
2 tsp garlic, crushed
2-4 roma tomatoes, chopped
1/2 cup onion, chopped
1-2 red bell pepper, chopped
4 T fresh basil (or use dried-2-3 tsp)
2 oz. parmesan cheese
Preheat oven to 400 degrees. Spray an 8-inch pie pan or baking dish. Beat eggs in a bowl, them mix in all the ingredients. Pour into the pan. Cook for 12-15 minutes or until the eggs are firm. Top with a little salsa if you want. Yum.
Serves: 2-4
